About

The following goals are intended to be achieved, in three stages, from 2020 to 2026:

  • Understand and show the level of knowledge about traditional cuisine that restaurant and hotel industry professionals have about the tourist resources of each parish and municipality, in the area under analysis, and how they apply it in their production and dissemination, especially regarding local and regional cuisine.
  • Presentation of innovative proposals that can be useful for producers, food and hotel industry professionals, and all partners involved in local and regional tourism.
  • Knowledge sharing and acculturation. Experiences shared through migratory phenomena – international mobility. Congress.
